Monday Must Have Superfood and Supplement Series...Pumpkin Seeds

With all the pumpkins around for the season little praise is given to the seeds, but pumpkin seeds are like tiny hidden gems and considered one of nature's almost perfect foods. Because they turned up so frequently in folk medicines, scientists began to conduct research on the oil they extracted and for numerous reasons are considered a super food or a food that packs a punch in the nutrient department. They are a great source of the B vitamins or stress fighters and even have B17 which has been credited with having anti-cancer properties. They protect against heart disease, contain phytosterols compounds that reduce LDL cholesterol, effectively have been proven to reduce inflammation, contain high levels of minerals and essential fatty acids and are said to have a hormone building element. Besides all of that, they taste amazing roasted with olive oil and sea salt or mixed with dried cranberries and cashews thrown in your bag for a snack on the go. Props to the pumpkin seed !
