Accidental Brilliance Superfood & Supplement Series...Quinoa


Simple to cook and nutty in flavor this Peruvian grain related to leafy green vegetables like spinach and swiss chard is perfect in place of any grain. Once considered the "gold of the Incas" after being recognized for it's ability to increase the stamina of warriors. It is considered a complete protein as well as a good source of magnesium, iron, copper and phosphorus. In addition it is a good source of lysine, an amino acid important for tissue growth and repair. Delicious and nutritious can't beat that and it cooks in minutes.
