Accidental Brilliance Superfood + Supplement Series...Wild Greens
Not all greens are the same and if you can get some wild greens into your salad bowl, they are the best and Spring is the season to get em'. Wild arugula, dandelion and watercress are pretty common in markets these days and most farmer's markets have some other great varities. But why wild ? Wild foods have a higher nutrient and mineral content and have never been genetically engineered which unfortunately many fruits and vegetables have been these days, never fertilized or infected with pesticides either. Arugula although often thought of as a lettuce, is actually a cruciferous vegetable...a cousin to broccoli and cauliflower so, it is rich in phytonutrients or those little things that help reduce the risk of certain cancers including, breast, stomach and colon. And just one cup delivers 5 percent of the daily vitamin C and 3 percent of the day's calcium we need, not bad. Watercress along with vitamin C and calcium is also very high in vitamin A and iron. Seems like a small food choice but it has the potential over time to make a big difference and add a little variety to any salad, and here's an excuse to get a little wild !
