A few years ago I got curious about everything I had been hearing about eating a raw diet. After seeing the beautiful Carol Alt talk about how it had changed her life and her health I bought a few books on the topic. After reading just a few chapters I decided to give it a try. Although at first it might seem a like a huge change, a diet of completely live, raw food or food never heated above 118 degrees, once I got started I realized I ate a primarily raw diet already. But, this is what convinced me to give it a try...the concept that when you plant a cooked seed it will not grow but if you plant a raw seed it will grow. So simple and so powerful. When food is heated it loses between 40% to 90% of the nutritional value, the vitamin content destroyed. And, the great part is that you don't have to make the switch overnight and you can do it part time, even a few days a week or a few meals a day will make a huge difference on your health, give you an amazing boost in energy levels and increase your ability to concentrate and sleep better and stave off or reverse disease. I promise you, almost overnight you will feel different. And, now that eating raw is becoming more mainstream there are tons of great books and delicious products on the market. Two of the first books I read and still refer to are Eating In The Raw by Carol Alt and The Sunfood Diet by David Wolfe. Or just google "benefits of eating raw" and read a few articles, I bet you get hooked.
*there is a great documentary out this week called Forks Over Knives on just this topic, the benefits of eating a more plant based diet...go check it out.
